Frittata Pizza!

Lunch for today is a frittata pizza topped with tomato, mozzarella, ricotta, prosciutto and basil leaves. Totally low card and totally delicious!!!

2 eggs
Splash of heavy cream
1/4 tsp oregano
1/4 tsp salt
1/4 tsp pepper
1 small garlic clove (minced)
1/2 romana tomato
2 slices of proscitto
1/2 cup shredded mozzarella
1 cup ricotta

Lightly coat a large broiler proof skillet with cooking spray abd heat skillet over medium heat. Then combine eggs, heavy cream, oregano, salt, and pepper.

Pour egg mixture into skillet. sprinkle with garlic. As it sets, run a spatula around edge of skillet, lifting mixture so uncooked portion flows underneath. Continue cooking and lifing edges until almost set.

Remove skillet from heat. Sprinkle mixture with chopped tomato and toppings.

Broil for 1-2 minutes or just until cheese is melted and enjoy!!!
